Tudor House Welsh Rabbit

The success of this dish, sometimes mistakenly called "Welsh Rarebit", lies in cooking it over low heat until the cheese has melted.

Preparation Time:   5 min

Cooking Time: 15 min

Ingredients (for 4):
8 oz. grated Cheddar cheese
1 oz. unsalted butter
1 teaspoon English mustard
3 tablespoons of beer
Salt & black pepper
4 slices of buttered toast

Instructions:   Cook the cheese, butter, mustard and beer in a heavy pan over very low heat; season. Stir occasionally until the mixture is smooth and creamy.

Spoon the cheese on to the toast and put under a hot grill until golden and bubbling.
